This step-by-step guide will help you develop both your steaming technique and your pouring skills.
Preparing to Steam Milk
- Pour cold milk into your Dream Jug until it's just below the lip.
- If you’re using a jug without a marker, we recommend filling it up until just below the spout or up to a quarter of the jug.
- Before steaming, quickly purge the wand to remove any excess water.
- On your machine, select the appropriate milk type or switch to manual mode to adjust the temperature and steam power.
Steaming – Aerating and Texturing Milk
- Pull the wand toward you and place it just under the surface of the milk, between the centre and the side of the jug.
- Begin steaming and allow short rips of air into the milk for 3 to 8 seconds:
- 3 seconds for less foam (flat white)
- 8 seconds for more foam (cappuccino)
- After aerating, lower the wand slightly to stop adding air. A swirling vortex should begin to form, helping integrate the foam and milk for a smooth, silky texture. Angle the wand or the jug if needed to encourage the swirling motion.
- Important: Avoid letting in any new air during the texturing phase.
- The machine will stop automatically when the milk reaches the desired temperature. If you’d like to stop the steaming manually, simply click the circle button in the middle.
- Wipe the steam wand and purge again to clear any milk residue.
- Swirl the milk in the jug to keep it glossy and well-mixed before pouring.
Pouring Latte Art
General Tips
- Swirl your espresso and milk before pouring to ensure a uniform texture.
- Angle your cup slightly toward you to expose the surface.
- Begin pouring from about 5 to 10 centimetres above the surface in a thin stream. This allows the milk to pass beneath the crema without disturbing it.
Heart Design
- Start pouring high to sink the milk beneath the crema.
- As the cup begins to fill, bring the jug closer to the surface.
- Pour more quickly just in front of the center of the cup.
- A white dot will begin to form.
- As the cup fills, slow to a thin stream and pull the stream through the center to create the heart.
Tulip Design
- Begin the same way as the heart.
- Once the white appears, stop the pour.
- Pour just above the first shape and gently push the jug forward to stack the next shape.
- Repeat this step to add more layers.
- Pull through the entire pattern with a thin stream to complete the tulip.
Rosetta Design
- Wait until the cup is about three-quarters full.
- Pour just in front of the centre.
- Once a white line appears, begin gently moving your wrist back and forth to create a wave pattern.
- Pull the jug back to form the neck of the rosetta.
- Finish by pulling through the centre to complete the leaf-like design.
